that Eggs topic gave me this idea.

Cooking is awesome, except I suck at it; so everyone post and share your awesome recipes for your friends to see and try!

note: I will actually try and cook most of what is suggested in here so don't feel that you will be wasting your time! I'll even post pictures so you can see how badly I destroyed it! =P

Lee's Kick-a** macaroni and cheese:

You need:
Elbow macaroni
Lots of cheese, your choice of flavour
some kind of meat in large chunks (hot dogs \ sausages \ pork chop \ moose works well)
your choice of vegetables (I like mushrooms; red peppers and fried onions) be aware that mushrooms leech and absorb flavour significantly so they will drastically change the final products flavour.
Milk
(Corn Starch + water)
OR
(flour + butter) - better way imo.

boil the Macaroni till soft
Mix about a tablespoon of water + tablespoon of corn starch (OR melt together about twice as much butter + flour) then add a thin layer of milk into the saucepan (it's all eyeballing depending on how much sauce you want) this will help to thicken the sauce
heat to JUST BELOW BOILING (do not boil or you'll ruin the milk)
add a metric ton of cheese. (not really; but don't be afraid to grate an entire block up)
melt it all together until it becomes a fine gooey cheese sauce.

take your pre-cut meat, cut it into large chunks (I prefer large chunks over diced, but your call) and mix everything into the macaroni, vegtables, meat, spices, hot sauces, whatever you like)

pour the entire cheese sauce over the macaroni and mix it well, don't forget that there is no such thing as 'overboard' when it comes to cheese.

grate some more cheese on top of your creation but don't mix it in.

Bake at 350 for about 45 minutes (basically until the cheese on top is golden-brown)

Taco Pie. (yes it has a funny name but it's awesome)

You will need:


1 lb. ground beef
1 packet taco seasoning
1 jar picante sauce
1can refried beans
shredded cheese
1 bag tortilla chips
2 frozen deep-dish pie shells
-----------------------------
Optional Items
1 container sour cream
1 tomato, diced
lettuce
Salsa

Brown beef in skillet; drain. Add taco seasoning and water.
Mix refried beans with picante sauce. (this will be your pie filling) It won't take much, you just need enough to line your pie shells. You can use however much of the refried beans/picante that you'd like. After you've done this, add your beef. After the beef, sprinkle the shredded cheese on top until the beef is covered. After the cheese, crunch tortilla chips on top to make the crust. Do this until the cheese is covered. Bake in oven for 30-35 minutes or until the tortilla chips are golden brown.

Serve with diced tomatoes, lettuce and sour cream. Or whatever the hell you want. Bitch, I don't know your life.

Bit of a wintery dish, best done in a Le Curset or equivalent. I practically live of stuff like this at Uni


Beef in Beer

900g of Steak, cut into 5 cm squares 350g onions, quartered and layered
1 tablespoon of olive oil 1 heaped tablespoon of plain flour
1 garlic clove, crushed 1 Bay Leaf
1/2 Teaspoon of Dried thyme A bit of Black Pepper

and 1 bottle of ale, a nice strong one for richer flavor. White Shield is my usual choice. Failing that, Timothy Taylor's Landlord

Preheat oven to gas mark 1 (140ēc (275ēf))

• Heat oil in the Casserole on the hob until its frazzling, then place the meat on-top bit by bit until there a dark mahogany, then remove them to a plate
• Then with the heat still high, put the onions in and frazzle them until brown around the edges
• Return the meat to the casserole as well as any juices, then add the flour and turn the heat down, wooden spoon it about until all juices are soaked
• Then stir in the Beer and when it starts to simmer, add the thyme, bay leaf, crushed garlic and the tad of black pepper
• Put lid on tightly and insert the casserole onto the oven;s middle shelf and cook it there for 2 and 1/2 hours, then leave it alone, it will start to smell wonderful halfway thought the cooking but be patient

Serve with either Mash potato or New Potatos. Red Cabbage also works well

All three of these sound really nice. Shame I can't really cook. I can make simple stuff like spaghetti bolognese, curries, fried breakfasts, roast dinners but I don't have any original recipes of my own. At Uni I just live on cheese on toast for lunch and pork chops for dinner.

You will need:

1 Toaster
2 Slices of bread
1 Knife

Optional items:

Butter
Jam
Other condiments

Place bread in toaster.
Toast for preferred amount of time, careful not to burn.
Add butter and other optional items.

I'm not much of a cook at the moment..
